We are planning to visit Vegas soon and make the best of things. We used to love the buffets. Are any open now, or planning to open soon?

I'm heading to Vegas soon with my wife and will be staying for a week. This is our first trip. We can't wait to try the buffets. If we only go to 1 buffet, what should we pick? We are big seafood fans, but like just about everything.
